So last night I decided I wanted to bake something pumpkiny, but didn’t want to go to the store to buy ingredients. I had heard about a really easy 2-ingredient recipe for pumpkin cake that sounded interesting. The two ingredients are a box of spice cake mix and a standard size can of pumpkin. However, I did not have a box of spice cake mix, just a box of carrot cake mix. So I shrugged my shoulders and decided to try it.
You mix the cake mix and pumpkin in a bowl, pour into a greased 9×13 pan, and bake at 350F for 25-30 min or until a knife comes out clean. In lieu of icing, I topped a slice of the finished product with a scoop of pumpkin ice cream!
The result: YUM!

I love this Heather and I also make it with spice cake mix. Tastes just like the DD pumpkin spice muffins. I make them in muffin tins. Makes 12. Julie does it with a brownie mix and makes healthy brownies for alot less $$ than no pudge.
Yes, the original recipe was for spice cake mix, but I didn’t have any on hand, so I just used what I already had, which in this case was carrot cake. Works just as well!
I have also heard of people using yellow or white cake mix and just adding a bit of pumpkin pie spice to the mixture.
